Fried rice with shrimp paste (kao cluk ka pi)


Kao cluk ka pi is a single dish of the central region but now they are all spread to all region in Thailand, very poppular dish, easy to eat for busy day. BUT take a long time to cook and lots ingredients to prepare :( Anyway  the taste is great to deal with ;) Take your time and cook this for great lunch or dinner. this dish actually use leftover cooked rice mix with good quality shrimp paste and fried until aromatic. Why I must wait until we have leftover, so I cooked rice for these LOL. This is a single dish so mix everything and eat, how easy LOL Hope you'll enjoy my recipes.


You will need : ( 3 serving)

  • 1 small sour young mango
  • 1 half carrot
  • 1 shallot
  • 4 Thai red chili (or as much as you like)
  • 1 small cucumber
  • 2 eggs
  • 6 cups cooked Thai jasmine rice (or Japanese rice if you have on hand)
  • 2 tbs shrimp paste (choose a good quality one)
  • 1 ts. fish sauce
  • 1 ts. sugar
  • 1 clove chopped garlic
  • 150 g. pork belly
  • 3 tbs palm sugar
  • 2 clove chopped garlic
  • 4 ts. fish sauce
  • 1 ts. soy sauce
  • 1 ts. dark sweet soy sauce
  • cooking oil for frying
  • water
