Thai Style Noodles in Gravy (Rad Na, Lard Nar)

     ราดหน้า Rad Na or Lard Nar is popular dish in Thailand too. "Warm gravy and soft noodles" So this recipe I made today is the easiest recipe like a base of the dish or in other word this is a authentic style, Nowadays many restaurant add more ingredients, such as carrot, broccoli, baby corn, mushroom, or whatever you can find in your market. You can also change the pork into any kind of meat you like, shrimp and squid is very popular for this dish.

Fresh Wide Rice noodles, Chinese Kale, Sweet Soy sauce

    I use fresh wide rice noodles, if you can't find the fresh one you can substitute with dried one. You may use other kind of noodles which you like, rice vermicelli is great too. I have try this with spaghetti sound weird but it's turn out great! ;-)

You will need : (a meal for one person)
  • 3/4 cup Wide Rice Noodle (if use dried wide rice noodle cook it by following direction from the package before cooking)
  • 1/4 cup Pork (slice)
  • 1 cup Chinese Kale (cut 1" long)
  • 1 ts. Garlic (chop)
  • 2 ts. Corn starch (dissolve with 4 ts. water)
  • 2 ts. Soy Bean paste
  • 1 ts. Sweet soy sauce
  • 1 ts. Sugar
  • 1 ts. Soy sauce
  • 1 ts. Fish sauce
  • 3 ts. Oyster sauce
  • 1+1/2 cup Water
  • Cooking oil for frying
         *You could mix Blue ingredients before cooking and add in at once, for easier step ;-)
